Black Bean Tacos

The reason I love this recipe is that the pepper and guacamole truly steal the show. This meal also takes about 20 minutes total to prepare which is AMAZING. I have made this for week night dinners or for quick lunches at home.

RECIPE CARD

TIME: about 20 minutes  

INGREDIENTS

  • Tortillas

  • 1 red pepper

  • 1 green pepper

  • 1 yellow pepper

  • 14.5 oz can black beans

  • 1 tbsp paprika

  • 1 tbsp chili powder

  • Cheddar cheese

  • Guacamole

  • Salt & pepper

INSTRUCTIONS

  1. Make guacamole. Recipe linked!

  2. Clean and cut peppers.

  3. Heat medium sized pan with 1 tsp olive oil. Add peppers to pan and cook until desired texture.

  4. Drain black beans. Heat up in a small pan on medium heat. Add paprika and chili powder to beans. Stir thoroughly.

  5. Warm tortillas on pan or in the oven

  6. Tacos are ready to serve!
