Beef Stew
If you’re looking for something to make while you are with your family this holiday season, this is an amazing recipe to make. Not only is it veggie packed, it also will make your entire house smell amazing.
I love this recipe because you can put it in the oven for 5 hours and forget about it. This allows for you to be more present with your family around meal time. This is also great to save as leftovers during the cold winter months.

RECIPE CARD
TIME TO MAKE: 5 hours and 20 minutes
INGREDIENTS:
1 ½ lb stew meat (diced)
4 cups baby yellow potatoes (in 1 inch pieces)
5 medium carrots (in 1 inch pieces)
1 yellow onion (diced)
7 stalks celery (in 1 inch pieces)
1 tbsp oregano
5 cups tomato juice
1 cup beef broth
3 bay leaves
INSTRUCTIONS
Pre-heat oven to 350F.
In a dutch oven, add all ingredients.
Place dutch oven in the oven for 5 hours.
Serve!
TIPS
I recommend stirring this recipe every hour or so.
Serve with bread, corn bread, crackers, or by itself.
