Shrimp Fried Rice
Fried rice is tricky to perfect, but this recipe is delicious. I have come to realize that the KEY is using cold rice. I made the rice for this dish about 24 hours before cooking it and the rice was perfect. You can use fresh rice, however, it won’t crisp the way that you may want it to.
I chose shrimp as the protein for this dish, but you can use any protein you have in your kitchen. I think that chicken or pork would also pair really well with this recipe.

SERVES: 4
INGREDIENTS
1/2 tbsp sesame oil
1/2 tbsp sesame seeds
1/4 tbsp ground ginger
4 cups cooked rice
1 lbs shrimp
3 eggs
4 cloves garlic
1/2 cup green onion
1 cup carrots
1 cup yellow onion
3/4 cup soy sauce
2 tbsp oyster sauce
INSTRUCTIONS
On medium heat, add 1 tsp sesame oil and 1 tsp soy sauce. Add carrots. Cook for 3 minutes or until carrots are soft. Remove from pan.
On medium heat, cook green peppers for 3 minutes or until soft. Remove from pan.
On medium heat, add 1 tsp sesame oil and 1 tsp soy sauce. Add onion and garlic. Cook until onion is opaque. Remove from pan.
On medium heat, add 2 tsp sesame oil and 2 tsp soy sauce. Add the shrimp and the onion/garlic combination. Cook until shrimp is fully cooked (5-7 minutes). Remove from pan.
On low heat, add the 3 eggs and 1 tbsp soy sauce. Stir regularly until the eggs are almost fully cooked. Push to one side of the pan.
On medium heat, add the 4 cups of cold cooked rice, shrimp mixture, carrots, and peppers.
Add oyster sauce and 1/2 cup soy sauce. Stir together.
Stir all ingredients together. Continue cooking until desired crispiness (7-10 minutes).
Serve!
