Oregano Potatoes

These are very similar to some other potato variations that I have shared but I love this flavor combination. I also think that adding the butter after cooking the potatoes adds another dimension.

You can serve this side with any main dish, but I served it with chicken and asparagus.

RECIPE CARD

TIME TO COOK: 50 minutes

SERVES: 3-4

INGREDIENTS

  • ½ tbsp oregano

  • ½ tbsp garlic

  • 1 tbsp butter

  • ¼ tbsp olive oil

  • Salt & pepper

  • 4 russet potatoes

 

INSTRUCTIONS

  1. Pre-heat oven to 425F

  2. Cut the potatoes into 1-inch pieces.

  3. In a medium bowl, combine oregano, garlic, olive oil, salt & pepper, and potatoes.

  4. Evenly distribute the potatoes on the baking sheet.

  5. Cook in oven for 40 minutes. Flip halfway through.

  6. Remove the potatoes, and transfer to a bowl. Add the butter and gently toss the potatoes in the butter.

  7. Serve!
