Salmon & Veggie Rice Bowl

This is an easy meal to throw together when you are in a pinch. It takes about 30 minutes to make which is great for weeknights.

TIME: about 30 minutes

INGREDIENTS

  • 2 salmon filets

  • 3 garlic cloves

  • 10 oz green beans

  • 1 small head broccoli

  • 2 green peppers

  • Jasmine rice

  • 1/8 cup soy sauce

  • 1/16 cup hoisin sauce

INSTRUCTIONS RICE

  1. Cook rice according to package. Put salmon in oven once rice is half through cooking according to package

  2. As it is cooking, clean & cut peppers, garlic, and broccoli. Dice garlic cloves.

  3. Place 1 tbsp olive oil in a large saute pan on medium heat. Add the garlic cloves. Allow to simmer for approximately 2 minutes.

  4. Add peppers, green beans, and broccoli to the saute pan. Add 1/16 cup soy sauce. Decrease to low heat. Stir consistently.

  5. Once the rice has been cooked, add it to the pan with the veggies. Add the remainder of soy sauce and hoisin sauce. Stir until thoroughly combined.

  6. Ready to serve!

 

INSTRUCTIONS SALMON

  1. Turn oven to 425F. Line sheet pan with silicon mat or parchment paper.

  2. Salt, pepper and olive oil (1 tsp) salmon. Place in oven.

  3. Salmon will need to cook for about 15 minutes. Internal temp should be above 145F.
