Salmon & Veggie Rice Bowl
This is an easy meal to throw together when you are in a pinch. It takes about 30 minutes to make which is great for weeknights.

INGREDIENTS
- 2 salmon filets 
- 3 garlic cloves 
- 10 oz green beans 
- 1 small head broccoli 
- 2 green peppers 
- Jasmine rice 
- 1/8 cup soy sauce 
- 1/16 cup hoisin sauce 
INSTRUCTIONS RICE
- Cook rice according to package. Put salmon in oven once rice is half through cooking according to package 
- As it is cooking, clean & cut peppers, garlic, and broccoli. Dice garlic cloves. 
- Place 1 tbsp olive oil in a large saute pan on medium heat. Add the garlic cloves. Allow to simmer for approximately 2 minutes. 
- Add peppers, green beans, and broccoli to the saute pan. Add 1/16 cup soy sauce. Decrease to low heat. Stir consistently. 
- Once the rice has been cooked, add it to the pan with the veggies. Add the remainder of soy sauce and hoisin sauce. Stir until thoroughly combined. 
- Ready to serve! 
INSTRUCTIONS SALMON
- Turn oven to 425F. Line sheet pan with silicon mat or parchment paper. 
- Salt, pepper and olive oil (1 tsp) salmon. Place in oven. 
- Salmon will need to cook for about 15 minutes. Internal temp should be above 145F.
