Pumpkin Cupcakes w/ Cream Cheese Frosting

This is a perfect Thanksgiving dessert. I made these for a recent holiday party that I attended and they were a hit. I love them because they have the pumpkin flavoring without the inconvenience of pumpkin pie or pumpkin bars.

 These are also great because you can serve the pumpkin base as muffins rather than cupcakes. By simply removing the frosting, you have the perfect pumpkin muffin to serve as a breakfast on Thanksgiving morning.

TIME TO COOK: 1 hour and 30 minutes

MAKES: ~16 cupcakes

INGREDIENTS: CUPCAKES

  • 1 ¾ cup flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/3 cup brown sugar

  • 2 tsp pumpkin pie spice

  • ½ cup coconut oil (melted & cooled)

  • ½ cup maple syrup

  • 15 oz pumpkin puree

  • 2 eggs

  • ¼ cup milk

  • ½ tsp vanilla

INGREDIENTS: FROSTING

  • ½ cup butter (room temperature)

  • 8 oz cream cheese (room temperature)

  • 1 tsp vanilla

  • 4 cup powdered sugar

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice

INSTRUCTIONS: CUPCAKES

  1. Pre-heat oven to 350F. Add cupcake liners to a muffin tin.

  2. In a mixer (or large bowl), add flour, baking soda, cinnamon, brown sugar, and pumpkin pie spice. Combine on low-medium speed until thoroughly combined.

  3. Add coconut oil, maple syrup, pumpkin purree, eggs, milk and vanilla to bowl. Mix on low-medium speed until thoroughly combined.

  4. Evenly distribute the batter into the muffin tin.

  5. Bake for 14 minutes.

  6. Allow to cool.

INSTRUCTIONS: FROSTING

  1. In a mixer (or large bowl), add butter, cream cheese, and vanilla. Mix together on medium-high speed.

  2. Add cinnamon and pumpkin pie spice. Mix together on low speed.

  3. Next, add one cup of powdered sugar at a time, then combine on medium speed. Do this until all 4 cups of powdered sugar are thoroughly incorporated.

  4. Once completed and cupcakes are cooled, frost the cupcakes.

  5. Serve!

TIPS

  • I use a piping set that I bought on Amazon to decorate these cupcakes. I also topped with some cinnamon! You can frost with a knife if you don’t have a piping set.

  • You can serve these without frosting! I have made these without the frosting and everyone really enjoyed them (plus less work for you!).
