Pesto Marinated Chicken

For this recipe, I make the entirety of the pesto recipe linked. I made the whole quantity because I served it with homemade pasta as a side with the chicken. However, if you are only using the pesto for the chicken, you can cut the normal recipe in half.

TIME: with marinating about 2 hours. without marinating about 30 minutes.

 iNGREDIENTS

  • Pesto Recipe

  • Additional ½ lemon

  • 2 chicken breasts

  • Pint Cherry Tomatoes

  • ½ cup mozzarella

  • ½ cup parmesan

INSTRUCTIONS

  1. Make the pesto.

  2. Place 1/2 of the pesto in a container and add the chicken breasts. Add lemon juice from 1/2 lemon. Allow to sit in the fridge for 1-2 hours before cooking.

  3. Turn oven to 425F. Line with parchment paper.

  4. After marination, place the chicken and cherry tomatoes on a sheet pan. Place in the oven for 15 minutes. Flip and add mozzarella and parmesan to the top of the chicken. Put back in oven for approximately 15 minutes (internal temperature of at least 165F).

  5. Ready to serve!

SERVE WITH: pasta or crispy potatoes!
