Ground Chicken Meatball Greek Bowls

Last week I shared a simple GF Ground Chicken Meatball recipe, but I wanted to a show a 30 minute weeknight dinner that you can make with the ground chicken meatballs. I love to have a healthy, high protein dinner at the end of a long day, but it can be so draining to cook a complicated meal. This recipe is so simple and you can meal prep all of the ingredients over the weekend if you want.

This combines a few really simple ingredients for a delicious meal that you can make on a busy weeknight. This is also a great recipe if you work from home because you can make yourself a quick, protein packed, healthy lunch. 

If you don’t have orzo on hand, you can absolutely use rice, cauliflower rice, or add the meatballs and Cucumber & Tomato Salad on top of some fresh romaine lettuce. I also love to add tzatziki or hummus to this recipe.

RECIPE CARD

TIME TO MAKE: 30 minutes

INGREDIENTS: MEATBALLS

  • 2lb ground chicken 

  • 1 yellow onion (thinly diced) 

  • 1 tsp garlic powder 

  • 1 tsp cumin 

  • 1 tbsp oregano 

  • 2 tsp parsley 

  • ½ cup parmesan 

  • 1 egg 

INGREDIENTS: CUCUMBER & TOMATO SALAD 

  • 5 mini cucumbers or 1 english cucumber (thinly sliced) 

  • 1 pint cherry tomatoes (quartered) 

  • 6 oz feta cheese 

INGREDIENTS: OTHER

  • 8 oz orzo 

  • Feta or goat cheese

  • Tzatziki or hummus

INSTRUCTIONS: MEATBALLS  

  1. Pre-heat oven to 400F. 

  2. In a large bowl, combine all ingredients. 

  3. Using a cookie scoop, create the meatballs. 

  4. Place meatballs on a baking sheet. 

  5. Bake meatballs for 20 minutes, or until internal temperature reaches 165F or above. 

  6. Once cooled, place in refrigerator for up to 3-4 days. 

INSTRUCTIONS: ORZO 

  1. Cook according to packaging

INSTRUCTIONS: CUCUMBER & TOMATO SALAD 

  1. After cutting and cleaning, combine cucumbers, tomatoes, and feta in a small bowl.

INSTRUCTIONS: BOWL ASSEMBLY

  1. In a bowl, add 4 meatballs, ½ cup of Cucumber & Tomato Salad, and ⅓ cup orzo. Sprinkle the bowl with feta or goat cheese. 

  2. Serve!
