Goat Cheese Meatballs & Marinara
These are SO yummy. This is a fun recipe to make for a group of people, especially for game day.
I was inspired to make these because one of my favorite restaurants serves bread with tomato sauce and goat cheese. This dish inspired me to make goat cheese meatballs with a delicious red sauce.
If you don’t want to serve the tomato sauce, you can serve the meatballs on a salad, in a bowl or by themselves. These meatballs are also a great meal prep recipe.
I made my own breadcrumbs from leftover bread. To make your own, you need about 4 cups of leftover bread and use a food processor to create the crumbed bread. Then preheat your oven to 300F. Evenly distribute the breadcrumbs on a baking sheet. Drizzle in EVOO and top with salt & pepper. Bake for 10-15 minutes. Allow to cool then store in an airtight container!

INGREDIENTS: MEATBALLS
1lb ground chicken
½ cup diced onion
2 eggs
1 ½ cup bread crumbs
1 cup goat cheese
2 tsp basil
INGREDIENTS: TOMATO SAUCE
1 can diced tomatoes
1 tbsp tomato paste
½ tbsp basil
1 tsp garlic powder
1 tbsp butter
INSTRUCTIONS: MEATBALLS
Preheat oven to 350F.
In a large bowl, combine all meatball ingredients.
Then using a cookie scoop, form the meatballs. Place on a baking sheet.
Bake for 20 minutes (or until internal temp of 165F).
INSTRUCTIONS: TOMATO SAUCE
In a medium sized bowl, combine diced tomatoes, tomato paste, basil, and garlic powder.
Using a food processor, blender or hand blender, combine the sauce ingredients.
Transfer to a small sauce pan on low heat. Add in the butter.Allow to heat for about 5 minutes.
Transfer to a serving bowl.
