GF Healthier Peanut M&M Cookies

Cookie dough may seem like an odd recipe to include in a meal prep series, but for me, this is my ULTIMATE meal prep recipe. I love to make a batch of cookie dough on Sundays and then have fresh cookies throughout the week. I love that this treat 10 minutes to bake on hectic weeknights and that I can enjoy it with a cup of my Sleepy Time Tea.

This particular recipe is great because it is Gluten Free. I also LOVE peanut M&Ms, but don’t love the artificial dyes that they have in them. When I discovered that Unreal made Dark Chocolate Peanut Gems I knew that I had to create a recipe with them. This recipe is in no way sponsored, but I am a huge fan of Unreal as a brand and trust them as a healthier alternative to some other brands. 

The key to cookies is baking them to a point where they are done, but still soft. It can be really easy to overbake cookies, but these will be plenty done after 10 minutes in a 350F oven. Also, make sure that all of your cookie dough balls are the same size. It doesn’t really matter how big you make them, as long as the size is consistent throughout the batch.

RECIPE CARD

MAKES: about 20 cookies

TIME TO BAKE: 10 minutes

INGREDIENTS:

  • 10 tbsp butter (room temperature)

  • 2 eggs 

  • ½ cup maple syrup 

  • 1 tsp vanilla 

  • 2 ¾ cup almond flour 

  • ⅓ cup brown sugar 

  • 1 tsp baking soda 

  • 1/2 cup Unreal Milk Chocolate Gems 

  • 1 cup Unreal Dark Chocolate Peanut Gems

INSTRUCTIONS: TO BAKE

  1. Pre-heat the oven to 350F. 

  2. Place the cookie dough on a baking sheet. 

  3. Bake for 10 minutes. 

  4. Allow to cool then serve!

INSTRUCTIONS: TO MAKE THE DOUGH

  1. In a large bowl, or in a stand mixer bowl, add butter, eggs, maple syrup and vanilla. Thoroughly combine

  2. Next, add almond flour, brown sugar and baking soda. Thoroughly combine. 

  3. Finally, add in the Unreal Milk Chocolate Gems and the Unreal Dark Chocolate Peanut Gems. 

  4. Form even sized cookie dough balls and put the dough in the refrigerator for 2 hours to 5 days.

NSTRUCTIONS: TO BAKE

  1. Pre-heat the oven to 350F. 

  2. Place the cookie dough on a baking sheet. 

  3. Bake for 10 minutes. 

  4. Allow to cool then serve!
