Crockpot Shredded Chicken & Veggies

This is a great crock pot recipe to make during a busy day. I really like that you can serve this on rice, tacos, salads, or by itself. It pairs really well with my guacamole recipe.

TIME TO MAKE: 3-4 hours

SERVES: 4-6

INGREDIENTS

  • 1 lb chicken breasts

  • 8 oz bone broth

  • 2 red peppers (thinly sliced)

  • 2 green peppers (thinly sliced)

  • 2 yellow peppers (thinly sliced)

  • 1 red onion (thinly sliced)

  • 28 oz diced tomatoes

  • 2 tbsp tomato paste

  • 2 tbsp paprika

  • 1 tbsp chili powder

  • ½ tbsp cumin

  • ½ tbsp olive oil

  • Salt & pepper

INSTRUCTIONS

  1. In a crock pot, combine chicken breasts, bone broth, red peppers, green peppers, yellow peppers, red onion, diced tomatoes, tomato paste, paprika, chili powder, cumin, olive oil, and salt & pepper.

  2. Cook on low for 3 hours. Once chicken is thoroughly cooked, remove the chicken and shred it. At this time, remove extra juice from the crock pot using a ladle.

  3. Add chicken back to crock pot and cook for an additional hour.

  4. Enjoy!
