Baked Ground Chicken Tacos
These tacos have the perfect crunch and are absolutely delicious. The taco filling is also really easy to make and the ground chicken can be substituted for any ground meat you have (ex. bison, turkey, beef).
I served this with my guacamole. This is an easy recipe that takes about 5 minutes to make and adds a lot of flavor to the dish.
Enjoy!
RECIPE CARD
TIME TO COOK: 30 minutes
SERVES: 3-4
INGREDIENTS
Ground chicken
1 tbsp paprika
1 tbsp chili powder
1/2 tbsp cumin
1 yellow pepper
1 red pepper
2 green peppers
8 tortillas
INTSRUCTIONS
Pre-heat oven to 350F.
In a medium saute pan on medium heat, add ½ tbsp olive oil, ground chicken, paprika, chili powder, cumin, and diced peppers. Stir regularly until meat is thoroughly cooked.
Add about ½ tsp of olive oil to each tortilla. Evenly disperse on tortilla. Place tortillas on baking sheet and put in oven. Allow to cook for about 3 minutes or until the top is golden.
Remove tortillas from oven. Add 1/8 cup shredded cheese to the upward facing portion of the tortilla. Then add about ¼ cup taco meat. Fold each taco in half.
Place tacos back in oven for 3-5 minutes or until golden brown. Remove from oven.
Serve!
TIPS:
Keep an eye on the tacos once they go back in the oven. They turn crispy relatively quickly.
Serve with guacamole and salsa.
