Crock Pot: Light Buttered Chicken

I love buttered chicken and I love crock pot meals. This also makes amazing meal prep for the week. This recipe has great flavor and is a lighter version of buttered chicken.

RECIPE CARD

TIME: 4-6 hours on low

INGREDIENTS

  • 1 lbs chicken breasts

  • 1 tbsp coconut oil

  • 1 yellow onion diced

  • 1 tbsp ginger

  • 1 tbsp garam masala

  • 1/2 tsp cayenne

  • 1 tsp chili powder

  • 1 tsp tumeric

  • 1 tsp coriander

  • 4 cloves garlic

  • 1 can tomato paste

  • 3/4 cup Greek yogurt

  • 1 can coconut milk

  • 3 tbsp butter

  • Can diced tomatoes

 

INSTRUCTIONS

  1. Dice onion.

  2. Put all ingredients in in crock pot.

  3. Cook on high for 3 hours or on low for 4-6 hours. Stir a few times.

  4. Serve with rice and/or naan!
