Cinnamon Sugar Cookies
I love a SIMPLE cookie recipe because they are easy to mix together and serve over the holidays. The hardest part about this recipe is rolling them into (somewhat) even logs, but it is definitely worth it.
The longer you leave the cookie dough in the refrigerator, the easier it will be to cut. I will make these and then let them chill overnight to ensure they are solid enough to cut the next day.

RECIPE CARD
TIME TO BAKE: 8 minutes
INGREDIENTS: COOKIES
1 1/2 cup flour
1/4 tsp baking soda
1/2 cup butter
1/3 maple syrup
3/4 brown sugar
1 egg
1 tsp vanilla extract
1 tbsp cinnamon
INGREDIENTS: SUGAR MIXTURE
¼ cup brown sugar
¼ white sugar
½ tsp cinnamon
INSTRUCTIONS: TO MAKE DOUGH
In a stand mixer bowl, add butter, maple syrup, egg and vanilla. Combine thoroughly.
Add flour, baking soda, brown sugar and cinnamon. Thoroughly combine.
Roll the cookie dough into three logs that are nearly the same size.
Place the cookie dough logs into the refrigerator for 3-6 hours.
INGREDIENTS: TO BAKE
Pre-heat oven to 350F.
Make “Sugar Mixture” by combining brown sugar, white sugar, and cinnamon in a small bowl.
When ready to bake, cut the cookie dough into 1/4 inch rounds.
Evenly coat all sides of the cookie dough rounds in the sugar mixture.
Place on baking sheet and bake for 8 minutes.
Allow to cool.
Serve!
TIPS
You can leave the cookie dough in the refrigerator for a few days or you can put it in the freezer.
If you want bigger cookies, you can split the cookie dough into large rolls, just make sure that when you slice them into rounds, they are approximately ¼ inch thick to help with even baking.
