Chickpea Meatballs

These are amazing mediterranean meatballs. I wish I had served them in a rice bowl the first time I cooked them, but they were also great with potatoes. Enjoy!

RECIPE CARD

TIME TO COOK: about 45 minutes

INGREDIENTS: MEATBALLS

  • 1 can chickpeas (drained)

  • 1 lb ground beef

  • ½ red onion (chopped)

  • 4 cloves garlic (diced)

  • ½ tbsp oregano

  • ¼ tbsp coriander

  • 2 eggs

INGREDIENTS: SERVE WITH

  • 1 ½ cup uncooked white rice

  • Potatoes

INSTRUCTIONS

  1. Heat oven to 350F. Line a large baking sheet with parchment paper.

  2. In a large bowl, combine chickpeas, ground beef red onion, garlic, oregano, coriander, and eggs.

  3. Stir together and mash the chickpeas as you stir. Once thoroughly combined, use a cookie scoop to portion.

  4. Evenly space the meatballs on the baking sheet.

  5. Put in the oven for about 25 minutes (internal temp 160F).

  6. Serve!

PS – I served with potatoes. To prepare the potatoes, heat oven to 425F. Cut 2 russet potatoes. Add 1 tbsp paprika, 1 tbsp olive oil, salt and pepper to the potatoes. Put potatoes on a small baking sheet that is lined with parchment paper. Cook in the oven for 35 minutes.
