Beef & Veggie Lettuce Wraps

Protein and veggie packed meal that is DELICIOUS. You can also serve the beef & veggie combination with rice, cauliflower rice, lettuce wraps, etc. Enjoy!

RECIPE CARD

TIME TO COOK: about 30 minutes

INGREDIENTS: SAUCE

  • ¾ cup water

  • ¼ cup brown sugar

  • ¼ cup soy sauce

  • ¼ cup coconut aminos

  • 6 cloves smashed garlic

  • 1 shaved ginger root

INGREDIENTS: BEEF & VEGGIE COMBINATION

  • 1 lb ground beef

  • ½ white onion (chopped)

  • ½ lb carrots (shaved)

  • 2 heads broccolini (chopped)

  • 2 red peppers (chopped)

INGREDIENTS: SERVE WITH

  • 1 ½ cup uncooked white rice

  • One head of lettuce

INSTRUCTIONS

  1. First, combine all sauce ingredients. Stir thoroughly and set to the side.

  2. Cook rice per instructions on packaging.

  3. Once all veggies are prepped, put in a large sauté pan with 1 tbsp of avocado oil on medium heat. Stir regularly for 5 minutes.

  4. After 5 minutes, add ground beef and ½ of the sauce to the pan with the veggies. Stir regularly on medium heat for 5 minutes. Then add the rest of the sauce to the pan.

  5. Stir regularly until ground beef is thoroughly cooked and veggies are desired texture.

  6. Serve with rice and lettuce!
