Crock Pot: Chicken Tinga Tacos

Crock pot meals are the best. This is a flavorful recipe that can be served in a ton of different ways. I love to make this on weekend because it makes great leftovers for the rest of the week.

INGREDIENTS

  • 1/4 tsp red chili flakes

  • 1tsp coriander

  • 1 tbsp paprika

  • 1 tbsp chili powder

  • 1/2 tsp garlic powder

  • 2 tbsp tomato paste

  • 28 oz diced fire roasted tomatoes

  • 2 chicken breasts

  • 3 roma tomatoes

  • 1 yellow onion

INSTRUCTIONS

  1. In a medium skillet, add 1 tsp olive oil on medium heat. Add diced yellow onion and tomato paste to the pan. Sauté until onion is transparent. Add to crock pot.

  2. Clean and dice the roma tomatoes.

  3. Add diced tomatoes, roma tomatoes, chili flakes, coriander, paprika, chili powder and garlic powder to crock pot.

  4. Use immersion blender to purée all ingredients in crock pot together.

  5. Add chicken breasts to the crock pot. Cook on low for 5 hours (or on high for 3 hours).

  6. Remove chicken from crock pot and shred. Place chicken back in crock pot for 15 minutes on low.

  7. Serve!

SERVED WITH: Spanish rice or tacos! Also great with my guacamole recipe!
