Veggie Mediterranean Bowls

PICTURED: Sweet Potato fries, Cucumber & Tomato Salad, Tzatziki, Hummus, and Greek Rice

Bowls are great because you can take what you have in your fridge and throw it together. This is such an easy combination of ingredients that is super flavorful.

RECIPE CARD

TIME: about 45 minutes

INGREDIENTS

  • Two sweet potatoes

  • Jasmine rice

  • Parsley

  • Cucumber & Tomato Salad

  • Hummus

  • Tzatziki

  • Olive oil

  • Salt & pepper

INSTRUCTIONS

SWEET POTATO (about 40 minutes to cook)

  • Turn oven to 425. Line sheet pan with silicon mat or parchment paper.

  • Peel the sweet potatoes. Cut into fry shaped pieces.

  • Put salt, pepper, and olive oil on “fries”.

  • Place on a sheet pan, and put in the oven for 20 minutes. Flip and cook for about 20 more minutes.

  • Remove from oven and serve!

GREEK RICE (about 30 minutes to cook)

  • For 4 people, I make take two cups of dried jasmine rice with 3 cups of water and 1 tbsp of olive oil. Follow cooking directions on package.

  • Then about halfway through cooking, I add one more tbsp of olive oil and 1/8 cup of fresh parley leaves.

  • Allow rice to finish cooking - then serve!
