Tangy Asian Noodles

This flavor packed and delicious vegetarian meal is perfect for a busy weeknight or cozy date night in. While this recipe calls for tamari, you can use any soy sauce that you have access to. Also, as always, take what vegetables you want and substitute where you desire.

TIME TO MAKE: 25 minutes

INGREDIENTS: SAUCE

  • 2/3 cup tamari

  • 1/2 tbsp maple syrup

  • 1/2 tbsp gochunjang

  • 1 tsp rice vinegar

  • 1/2 tbsp sesame seeds

  • 1 tbsp grated ginger

  • 1 tsp smoked paprika

INGREDIENTS: OTHER

  • 3 thinly sliced green onions

  • 1 yellow onion (thinly sliced)

  • 4 shaved carrots

  • 2/3 cup peas

  • 16 oz Pad Thai Rice Noodles

INSTRUCTIONS

  1. Boil water and cook the noodles according to the directions on the packaging.

  2. In a small bowl, combine all the sauce ingredients.

  3. In a large sauté pan, add green onions, yellow onion, carrots, and peas on medium heat. Add in about ¼ of the sauce mixture to the pan. Sauté the vegetables for 7-10 minutes, stirring regularly.

  4. Once the noodles are cooked, add them to the pan with the vegetables and add in the remaining sauce. Stir regularly for 3-5 minutes.

  5. Serve!
