Sugar Cookie Sandwich (St. Patrick’s Day Themed)
It is officially St. Patrick's Day in Chicago, which means not only is the river getting dyed green but also lots of celebrating is about to take place. I wanted to make a fun treat to share with you all for this weekend. I am sharing my sugar cookie sandwich recipe. The sugar cookies are amazing by themselves, so do not feel like you have to add in the frosting recipe attached.
However, if you want to have some fun decorating cookies this weekend. Making the cookies and the frosting is absolutely worth it.
The sugar cookie recipe is really easy and absolutely delicious. The biggest thing is making sure that you allow the cookie dough to be thick enough. You also want to make sure that every cookie is about the same thickness in order to prevent uneven baking. By no means will be perfect, but trying to make sure that it's as even as possible lead to the best result.
This frosting recipe is my mom and it's my absolute favorite frosting recipe on the planet. It's delicious and so easy to make. The key is adding in only half a cup of powdered sugar at a time. This is also a great frosting recipe if you have a cake or cupcakes to make!
PS - I realized when I went to go make this recipe that the sprinkles were Christmas themed. I wanted to make sure I bought artificial dye free Sprinkles, but unfortunately, I wasn't paying too much attention to the shape. The moral of the story is to use whatever decorations you have at your disposal. The point of baking is to have fun!!
RECIPE CARD
INGREDIENTS: SUGAR COOKIES
1 cup salted butter
1 cup sugar
2 eggs
2 ½ tsp vanilla extract
1 ½ tsp baking soda
3 cups flour
INGREDIENTS: FROSTING (VANILLA BUTTERCREAM)
¾ cup unsalted butter
2 cups powdered sugar
¼ tsp vanilla
INSTRUCTIONS: SUGAR COOKIES
In a large bowl or a stand mixer, add the butter. Mix until it is smooth.
Next, add the eggs and vanilla. Thoroughly combine with the butter.
Add sugar and baking soda, thoroughly combine.
Add in 1 cup of flour at a time. Mix until thoroughly combined, then add the next cup.
Once all of the ingredients have been added, form logs or balls of the dough. Create 2-3.
Refrigerate for 2-24 hours.
When you are ready to bake, preheat the oven to 350F.
Remove the cookie dough from the refrigerator and allow it to sit out for 15 minutes prior to rolling out.
Next, roll out the dough until it is about ¼ inch in thickness. Using a cookie cutter, cut out your sugar cookies. Place on a greased baking sheet.
Bake cookies for 9-10 minutes.
Allow to cool.
INSTRUCTIONS: FROSTING (VANILLA BUTTERCREAM)
Add the butter and vanilla to a large bowl or stand mixer. Mix thoroughly until smooth.
Next, add ½ cup of powdered sugar to your bowl at a time. Thoroughly combine the ingredients until all powdered sugar is added.
Set aside until you want to decorate your cookies.
You can refrigerate the frosting for up to 10 days. If you want to decorate your cookies later, just make sure you remove the frosting about 30 minutes before decorating then mix it up to add back in the fluffiness.
