Onion Potatoes

I eat potatoes nearly every single day. However, my friend and family aren’t as big of a fan as I am, so I am always trying to find ways to create new recipes that are potato centric. These are DELICIOUS! Enjoy!

TIME TO COOK: about 45 minutes

INGREDIENTS

  • 4 russet potatoes

  • 1/2 cup red onion (diced)

  • 2 tbsp fresh Thyme

  • 3 cloves garlic (diced)

  1. Preheat oven to 425F. Line a medium baking sheet with parchment paper.

  2. Clean and cut russet potatoes into chunks.

  3. Combine potatoes, thyme, garlic, olive oil, and red onion in a large bowl. Thoroughly combine.

  4. Put the potatoes on the medium baking sheet.

  5. Place in oven for 20 minutes. Then flip. Cook for an additional 20 minutes or until golden brown.
