Light Fried Rice

I love fried rice and this is a light take on a classic. Enjoy!

RECIPE CARD

TIME TO COOK: about 45 minutes

INGREDIENTS:

  • 2 cups frozen peppers

  • 1 cup frozen peas

  • 1 bunch broccolini (chopped)

  • 3 cups cooked rice

  • ½ cup soy sauce

  • ½ cup coconut aminos

  • 2 eggs

INSTRUCTIONS

  1. Cook rice according to instructions.

  2. Once the rice is almost done, add 1 tbsp avocado oil to a large saute pan on medium heat. Add peppers, broccolini, and peas.

  3. After cooking the veggies for about 5 minutes, add 3 scrambled eggs and ¼ cup soy sauce and ¼ cup coconut aminos to the center of the pan. Then add the rice to the pan. Combine the eggs, rice, and vegetables thoroughly.

  4. Add an additional ¼ cup coconut aminos and ¼ cup soy sauce.

  5. Allow the mixture to sit for about 2 minutes and then stir. Do this 3-4 times, or until rice is desired crispiness.

  6. Enjoy!
