Ground Chicken Tacos

I make tacos around once per week. This is a variation on a classic. I love using ground chicken because it is lighter than ground beef, but it can be dryer. That’s where the peppers come into this dish. Adding peppers helps keep the tacos moist and brings another dimension of flavor. Enjoy!
