Goat Cheese Pesto pasta
This is one of my FAVORITE recipes. This pesto can be used in lots of ways, but serving it with a gluten-free pasta is my favorite.

TIME: about 30 minutes
INGREDIENTS
Jovial Elbow Pasta (12 oz pasta)
2 oz goat cheese (feel free to add more or less based on your preference!)
2 cloves of garlic
1/2 cup pine nuts
1/2 cup olive oil
1/2 lemon juice
1/2 cup fresh grated parmesan
2.5 cups of fresh basil
Salt and pepper
INSTRUCTIONS
Cook pasta according to box.
For the pesto, combine peeled garlic, pine nuts, olive oil, lemon juice, parmesan, and basil in a food processor until smooth consistency. Place goat cheese and pesto mix into a pot on low heat. Stir consistently until mixed together.
After pasta is cooked and goat cheese pesto prepared, combine together and serve!
