Goat Cheese Pesto pasta

This is one of my FAVORITE recipes. This pesto can be used in lots of ways, but serving it with a gluten-free pasta is my favorite.

RECIPE CARD

TIME: about 30 minutes

INGREDIENTS

  • Jovial Elbow Pasta (12 oz pasta)

  • 2 oz goat cheese (feel free to add more or less based on your preference!)

  • 2 cloves of garlic

  • 1/2 cup pine nuts

  • 1/2 cup olive oil

  • 1/2 lemon juice

  • 1/2 cup fresh grated parmesan

  • 2.5 cups of fresh basil

  • Salt and pepper

INSTRUCTIONS

  1. Cook pasta according to box.

  2. For the pesto, combine peeled garlic, pine nuts, olive oil, lemon juice, parmesan, and basil in a food processor until smooth consistency. Place goat cheese and pesto mix into a pot on low heat. Stir consistently until mixed together.

  3. After pasta is cooked and goat cheese pesto prepared, combine together and serve!
