Fire Roasted Chili
Chili is the ultimate comfort food. The addition of the fire roasted tomatoes adds another dimension of flavor that is unparalleled.
Chili is also one of the most convenient foods. I like to make a big batch while watching college football on Saturdays and then having it as left overs throughout the week. This is also perfect to make for a group of people because it serves 4-6 people.

TIME TO COOK: 4-6 hours

INGREDIENTS
1 tsp garlic powder
2 tsp coriander
2 tbsp chili powder
2 cans spicy chili beans
2 cans chili beans
28 oz can fire roasted tomatoes
15 oz can diced tomatoes
1 onion (diced)
1.0 lb beef
INTSRUCTIONS
In a medium sauté pan, on medium heat, add ½ tbsp olive oil, onion, 1 tbsp chili powder, 1 tsp coriander and ground beef. Once the beef is fully cooked and the onion is opaque, remove from heat (about 7-10 minutes).
In a crock pot, add garlic powder, remaining coriander, remaining chili powder, spicy chili beans, chili beans, fire roasted tomatoes, diced tomatoes and the beef mixture. Stir until thoroughly combined.
Cook on low heat for 6 hours or high heat for 3.

TIPS:
If you cook this on high heat, make sure to stir every 30 minutes to prevent sticking.
If you cook on low heat, stir every hour. You can also leave this on for longer than 6 hours.
