I love a Mediterranean food and I have been working really hard to perfect my falafel recipe. Falafel is perfect if you’re looking for an easy vegetarian or vegan recipe. It is also great because it pairs well with many different kinds of foods and is perfect for a quick weeknight meal.

RECIPE CARD

 

TIME TO MAKE: 20 minutes

SERVES: 2-3

INGREDIENTS:

  • 3 2/3 cup chickpeas

  • 1/3 cup onion

  • ¼ parsley

  • ¼ cup cilantro

  • 5 cloves garlic

  • ½ tsp cumin

  • 2 tbsp chickpea flour

INSTRUCTIONS

  1. In a food processor, combine all ingredients.

  2. Once combined, transfer the falafel into a bowl and place in the refrigerator for 15-20 minutes.

  3. Pre-heat oven to 350F.

  4. Remove mixture from refrigerator and form into balls. I use a cookie scoop for this. Just make sure they are all about the same size.

  5. Place falafel balls on baking sheet and put in the oven.

  6. Bake for 10 minutes, then remove falafel and flatten using a fork.

  7. Flip falafel and place baking sheet back in oven for 5-7 minutes (or until crispy!)
