Chicken Sausage & Veggie Sheet Pan
I love this recipe for a busy weeknight meal. I normally serve it over rice with coconut aminos, but you can also serve it by itself, over cauliflower rice, or with a potato side.
Substitute out any vegetables that you don’t prefer. This is also great with cauliflower, yellow zucchini, green beans, broccolini, and asparagus.

INGREDIENTS
4 chicken sausages
1 yellow pepper (sliced)
1 green pepper (sliced)
1 red pepper (sliced)
1 yellow onion (thinly sliced)
2 green zucchini (diced)
3 cups broccoli florets
1 tbsp olive oil
2 tsp paprika
1 tsp garlic powder
1 tsp basil
2 tsp oregano
INTSRUCTION
Pre-heat oven to 400F.
In a large bowl, combine peppers, onion, zucchini, broccoli, paprika, garlic powder, basil, oregano, and olive oil.
Once thoroughly combined, transfer the vegetables to a large baking sheet.
Evenly slice the sausages into medallions, then evenly disperse on the baking sheet.
Put in the oven for 20 minutes.
Serve!
