Chicken Sausage & Veggie Sheet Pan

I love this recipe for a busy weeknight meal. I normally serve it over rice with coconut aminos, but you can also serve it by itself, over cauliflower rice, or with a potato side.

Substitute out any vegetables that you don’t prefer. This is also great with cauliflower, yellow zucchini, green beans, broccolini, and asparagus.

TIME TO COOK: 20 minutes

SERVES: 3-4

INGREDIENTS

  • 4 chicken sausages

  • 1 yellow pepper (sliced)

  • 1 green pepper (sliced)

  • 1 red pepper (sliced)

  • 1 yellow onion (thinly sliced)

  • 2 green zucchini (diced)

  • 3 cups broccoli florets

  • 1 tbsp olive oil

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp basil

  • 2 tsp oregano

INTSRUCTION

  1. Pre-heat oven to 400F.

  2. In a large bowl, combine peppers, onion, zucchini, broccoli, paprika, garlic powder, basil, oregano, and olive oil.

  3. Once thoroughly combined, transfer the vegetables to a large baking sheet.

  4. Evenly slice the sausages into medallions, then evenly disperse on the baking sheet.

  5. Put in the oven for 20 minutes.

  6. Serve!
