You all have LOVED the other granola ball recipes that I’ve shared, so I wanted to add one more to my New Year meal prep series. Almond butter is a great alternative to peanut butter if you (or someone you love) is allergic to peanuts. I also like that almond butter has a nuttier and more full flavor than peanut butter (in my opinion!).

THE BRANDS

I used Enjoy Life chocolate chips in this recipe because I love that they are dairy free. However, feel free to use any chocolate that you have at home. I also think this recipe could be really good with dried cranberries or raisins if you like them!

Almond butter can be really expensive, but I found a clean and relatively inexpensive version at Thrive Market. I posted last week that I was trying out their service and that I’ve had an overall really positive experience.

RECIPE CARD

MAKES: 8-9 granola balls

INGREDIENTS: SAUCE

  • 1 cup rolled oats 

  • ½ cup almond butter 

  • ¼ cup maple syrup 

  • ¼ cup semi chocolate chips 

  • ⅛ cup flax seeds

INSTRUCTIONS:

  1. In a medium bowl, thoroughly combine all ingredients. 

  2. Portion the mixture into balls using a cookie scoop. 

  3. Place in refrigerator for 1 hour to 7 days.
